I’m “the cook” in the family.
Not the only cook, but when it comes to holiday dinners, I’m the one up to my
elbows in gravy and chopped vegetables. Last Christmas I spent three hours in
the kitchen basting the ham, cooking the stuffing and roasting parsnips. That’s
why I love desserts that are easy and can be made the day before.

Lemon Tartlets found in the Passionate Cooks cookbook is the lemon curd. Five
ingredients that can be cooked ahead of time and turned into many different
desserts. One of my favorite dishes that uses lemon curd is trifle. A trifle is
a layered dessert and when you make it in a glass dish, it’s beautiful as well.
The night before your special
meal cut up an angel food or pound cake, homemade or store bought, and layer it
in a glass dish with the lemon curd, whipped cream and fresh fruit. Want more
flavor? Add Grand Marnier or vanilla extract to the whipped cream. Cover the
dish and set it in the refrigerator overnight. That’s it!
Besides celebrating the
release of the Passionate Cooks book, I am also rejoicing in the release of the
latest installment in the Heroes of Saturn series, Hero Unleashed, from Ellora’s Cave. The heroine owns a restaurant
and night club. If her chefs make lemon curd, I think she would be making a
dessert of the more adult nature. Hmmm…that is a thought.
